This is what I had for breakfast in Mexico, day 1. It's pretty heavy in my opinion for breakfast, but it would make a terrific lunch.
Ingredients:
6" flour tortillas
deli-sliced ham
a little bit of white cheese (as soon as I figure out what kind it was, I'll fix this post)
heavy cream
Put the ham and cheese inside the tortilla and fold the tortilla in half. Fry until it all sticks together. Drizzle whipping cream on top. Enjoy!

Oaxaca? Because it is wonderful to spell and to say, and it's white, and I think it's Mexican. Oh, and it's cheese.
