Our Easter Dinner

Chicken Club Brunch Ring
(Recipe given to me by Dallas' Professor's wife)

1/2 cup mayonnaise or Miracle Whip
1 Tbsp parsley
2 tsp Dijon mustard
1 1/2 tsp finely chopped onion
1 3/4 cup cubed cooked chicken breast (I cook it in the oven, wrapped in foil for about 45 min- 1 hour @ 350')
2-4 bacon stripes cooked and crumbled
1 cup Shredded swiss cheese divided (I just use mozzarella and it's yummy too)
2 tubes crescant rolls (8 oz each)
2 Tomatoes

1. In a large bowl combine mayo, parsley, mustard and onion.
2. Stir in chicken, bacon, and 3/4 cup cheese. 
3. Unroll crescent rolls, separate into 16 triangles and arrange in a ring with pointed ends facing the outter edge of an ungreased pizza pan or cookie sheet. Wide ends will over lap each other.
4. Slice tomatoes and place on top of filling. Fold points of the crescent dough over filling and tomatoes and tuck under the wide ends. The filling will be visible.
5. Bake at 350 for 20-25 minutes or until golden brown. Sprinkle with remaining cheese and let stand for 5 minutes (I always put all of the cheese in on step 2, it's just easier and less messy). 



This one below was made with no tomatoes... and I put half of the filling and one of the tubes of crescents in the fridge for leftovers. I only did 8 crescents to make it smaller. 



Potato Casserole
(Recipe given to me by a good friend, Melissa)

6 cups potatoes, peeled, cut up in small cubes
1 can (10 3/4 oz) cream of chicken soup
1/2 cup sour cream
4 oz.  cream cheese (half of those cream cheese packages)
2 TBSP butter, melted
3/4 cup shredded cheddar cheese
1/4 cup. green onion, sliced
1/4 cup milk
1/4 tsp. garlic salt
1/4 tsp. black pepper

1. In a large saucepan cook potatoes, covered in boiling water for 10-12 minutes (don't overcook). Drain and rinse with cold water.

2. Meanwhile, in a large bowl stir together the soup, sour cream, cream cheese, and butter. Then stir in 1/4 cup of the cheddar cheese, green onion, milk, garlic salt, and pepper. Stir in the cooked potatoes. Transfer mixture to a rectangular baking dish.

3. Bake at 350 degrees for 25-30 minutes. Sprinkle with the remaining 1/2 cheese. Let stand 5 minutes or until cheese melts.

This was really yummy! My favorite potato casserole yet. 



Side Salad
(Recipe made up by me :))

Chopped romaine lettuce
Sliced cucumbers
Sliced Strawberries
Feta Cheese
Poppyseed dressing

Throw together desired amount and eat up!


This was our Easter dinner this year... yum! I really wanted to make a ham, just because I have never cooked one before. But Dallas doesn't like ham and my kids won't eat it. The chicken brunch ring worked out perfectly to replace the ham :)
